Upside-Down Apple Pancake

  2 tablespoon butter or margarine
1/4 cup granulated sugar
1 to 2 teaspoon cinnamon
4 apples, peeled and sliced

BATTER:
1/3 cup all-purpose flour
1/2 teaspoon baking powder
2 egg yolks
1/3 cup milk
4 egg whites
1 cup granulated sugar

In two 9-inch pie plates or a 13×9-inch baking dish, melt butter in 400 F oven, about 2 minutes. Combine sugar & cinnamon and sprinkle evenly over butter; bake for 2 minutes. Arrange sliced apples over top; bake for 10 minutes.

Meanwhile, in bowl, combine flour & baking powder; blend in egg yolks and milk. In large bowl, beat egg whites until soft peaks form. Fold into milk mixture; spread evenly over apples. Bake for 15 to 20 minutes or until lightly browned. Remove from oven; loosen edges with knife and invert onto serving plate. Serve as is, or with hot custard sauce or whipped cream.
